Dumpling party fillings

We had a dumpling party a couple weekends ago. One of our guests doesn't eat pork, so I came up with a few options for non-pork fillings. I also created my own chili oil for the party, and will use another post to write about ways I'd do it differently next time.

Seafood filling: blend the following together

  • 1 lb of shrimp, deveined and unshelled
  • 1 lb of scallops
  • 1 tbsp of xiaoxing wine
  • salt and white pepper, to taste.
  • 2 tsp sesame oil, optional.

Vegetarian filling: stir fry these in 3 tbsp of oil, in the following order

  • 1 tbsp minced ginger, 1 small onion minced
  • 2 cups shiitake mushrooms
  • 1 1/2 cups cabbage
  • 1 1/2 carrots
  • 1 cup Chinese chives
  • 3 tbsp of xiaoxing wine
  • 2 tbsp soy sauce
  • salt and white pepper, to taste.

Chicken filling: mix the following together

  • 1 lb ground chicken
  • 1 cup batch of minced Chinese chives
  • 3/4 cup chopped shiitake mushrooms
  • 1 tbsp of xiaoxing wine
  • salt and white pepper, to taste.
  • 2 tsp sesame oil, optional.
